Here's a shortened version of my story.
My name is Dana and I have been gluten free since 2010. In the past, I had digestive issues that were never truly diagnosed and usually written off as typical IBS. I figured everyone felt this way! Then, after many months of feeling lousy and losing 25 pounds without reason, my husband was diagnosed with Celiac disease. I decided to go gluten free to support him and have never felt better. Our daughter went GF as well and feels better eating a clean diet and has more energy.
But, it begins much earlier than 2010. My husband and I have 5 kids and our oldest was diagnosed with Celiac in 1999 when he was 3 years old. He had many other allergies and no symptoms for Celiac- his allergist was the one to recommend doing a blood panel for Celiac disease; his blood results were sky high!
We know now that there is a family history and our kids understand that gluten can cause numerous digestive problems as well as remain dormant in our bodies and manifest itself later in life.
Some day soon, everyone of us will develop some sort of allergy to the foods that are made today due to genetically modified seeds and engineered crops. We are committed to making our flours the best by grinding them fresh and using only natural, organic and nonGMO products. I look forward to sharing with you my passion of baking and being gluten free!
